BROWN BUTTER ESPRESSO BROWNIE BLONDIES RECIPE:
Ingredients:
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg at room temperature
- 1/2 cup packed light brown sugar
- ¼ cup granulated white sugar
- 1 tsp vanilla extract
- 1 tablespoon instant coffee and dissolved in 1 tablespoon of water.
- 8-9 brownie cookies, chopped into pieces
- 1/3 cup chocolate chips

Method:
1. Preheat your oven to 350F/180C,
Butter and Line an 8* 8-inch square pan with parchment paper, leaving a 2-inch overhang on the sides and set aside.
2. On medium heat, melt the butter in a small saucepan.
Cook, stirring occasionally until butter begins to foam and brown, about 10 minutes.
Immediately pour into a heatproof bowl; cover and chill until solidified, about 1 hour.
3. Mix the flour, baking soda, and salt in a bowl.
4. In the bowl of your stand mixer, fitted with the paddle attachment or with a hand mixer beat the browned butter, sugars, coffee mixture, and vanilla extract until light and frothy (about 2 to 3 minutes).
Beat in the egg for 2-3 mins. Then, on low speed, beat in flour mixture until incorporated.
Fold in the chopped cookies and chocolate chips.
5.Pour the batter into the prepared pan and top with a few additional chocolate chips and cookie pieces.
6. Bake for about 25 minutes, or until the top is golden brown, and a toothpick inserted into the center comes out with a few moist crumbs, then remove from oven and place on a rack.
Cool completely before cutting into bars.
*Use any chocolate cookie in place of brownie cookies and these would still be delicious"
