These Zucchini Protein Brownies it's free of gluten, nuts & refined sugar/vegan.
I love hiding veggies in my desserts.
Adding zucchini to your brownies gives them more moisture, fiber, and of course more vegetables in your daily intake.
I have no problem eating zucchini by itself but if I can add chocolate to it, why not? I’m a chocoholic for sure.
How many carbs and protein per brownie will depend on which protein powder you use.
The one that I use is very low carb (5g) and high in plant protein (25g) per serving.
Because there is more than one scoop of protein powder in this recipe, mine came out to 8g of protein per brownie. Yes, please!
How To Make Zucchini Protein Brownies:
Ingredients:
- One cup organic tahini (I used a Creamy Tahini with no salt added)
- Two zucchinis (washed, peeled, and shredded)
- Half cup of vegan chocolate protein powder ( I used a lean protein & greens in chocolate mocha flavor)
- One ripe banana
- 3/4 cup raw cacao powder
- Two flax eggs (a flax egg is 1 tbsp of ground flaxseed mixed with 3 tbsp purified water)
- One tsp baking soda
- One cup Lakanto (granulated) or one cup coconut sugar
- 1/3 cup dark chocolate chips (I used dark chocolate chips sweetened with Stevia, no sugar added).

1. Preheat the oven to 350°.
2. You can either line a baking pan with parchment paper and grease the uncovered sides or you can use a casserole dish lightly greased. Then set aside for later.
3. Add the tahini, banana, flax eggs, and Lakanto (or coconut sugar) into a blender and blend until smooth.
4. Then add cacao, protein powder, and baking soda, blend again.
5. Spoon batter into a large bowl, set aside.
6. Take your shredded zucchini and either using paper towels or a clean dish towel, press out the excess liquid.
7. Add your zucchini and half of your chocolate chips into the bowl and mix them into the batter.
8. Transfer the batter to your baking dish and then sprinkle the remaining chocolate chips on top. You can use a fork to lightly press them into the batter.
9. Bake for 30–35 minutes (I baked mine for 33) and then allow brownies to cool completely.
